When the Kids are Away....

the parents eat good!  Oh, I TRY to get my kids to eat what I want to fix and sometimes they're good about eating, but mostly it's a struggle.  EWWWW...asparagus...are those *horror* TOMATOES?   And you don't want to know the hornets nest stirred if I DARE to even WAVE a mushroom in front of a dish.  I'll spare you the gory details.

So, Tuesday my girls had their dance recital rehearsal and I packed them lunches but decided to cook for just my husband and I.  Wanna see what I made?  Fettuccine with Peas, Asparagus and Pancetta:
This was the cover shot from the May edition of Bon Appetit and you'll have to take my word for it, my dish looked exactly like it.  The husband (ever the carnivore) asked that I increase the amount of pancetta.  Until I explained to him exactly how expensive pancetta is.  Maybe next time I'll use bacon.  And in case you are wondering, it was just as yummy as it looked.
